1. Brief Description:

The research team of the Laboratory of Animal Physiology conducts basic and applied research to elucidate the molecular mechanisms of action of bioactive molecules with antioxidant properties with an ultimate goal to create biofunctional foods with health claims regarding the improvement of the organism’s antioxidant defense. Bio-functional foods are products that enhance the normal function of the organism or reduce the likelihood of chronic diseases. Antioxidants are substances that prevent oxidation of important cellular macromolecules such as DNA, proteins and lipids from the potentially harmful free radicals. Strenuous exercise as well as a variety of pathological conditions may lead to the accumulation of free radicals and, consequently, the manifestation of oxidative stress. Antioxidants have been shown to have beneficial properties as they contribute significantly to improving the body's antioxidant defense and promoting health. However, free radicals participate in physiological functions of the organism such as intracellular signaling pathways.

                 Thus, the research attempts to answer the following questions:

  • How does an antioxidant affect the organism?
  • What is the minimum amount of the antioxidant to be administered so as not to affect the normal functioning of the free radicals but to improve the antioxidant mechanism and the health of the organism?
  • Which are the molecular mechanisms of action of bioactive antioxidant molecules in various tissues?
  • Is there any difference in the action of products depending on the qualitative composition in antioxidants?

The aim of our laboratory is to analyze endemic plant extracts, as well as whey protein extracts, with potentially significant antioxidant and anti-tumor activity. In addition, in recent years, research interest has focused on exploiting by-products of agro-industries in order to create innovative animal feeds that exhibit antioxidant activity. At the same time research is being done to develop bioactive foods based on personal oxidative stress profile in patients.

Laboratory experiments include in vitro, in vivo and clinical studies. We use state-of-the-art technologies such as transcriptomics, metabolomics and proteomics for a holistic approach and exploration of the effect of extracts on cells, animal organisms and humans. In particular, we study the metabolic profile of humans in conjunction with their lifestyle requirements and deduce their personalized needs in terms of bio-functional foods that they could benefit from. The aim is to prevent diseases, but also to treat existing ones through an individualized diet, designed exclusively according to each individual's metabolic profile

  4. INTERNATIONAL COLLABORATION in the context of Thrace’s PEP 2006-2008 ‘Incorporation of bioactive plant extracts in the production and certification of biofunctional milk products of high added value’. Budget 400000 euros.
  5. Nutritional value and production of high quality biofunctional milk products by adding plant extracts enriched in antioxidants (budget: 260000 euros) From the grant Innovation poles of GSRT.
  6. Development of biofunctional flour by incorporation of plant extracts enriched in bioactive compounds’. In collaboration with the Kaplanides’ Mills company (budget: 70000 euros).
